Zucchini Veggie Pizza Rolls

Ingredients
  

2 medium zucchinis

1 cup marinara sauce (plus extra for dipping)

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 cup diced bell peppers (red and yellow)

1/2 cup finely chopped red onion

1/2 cup sliced black olives

1 teaspoon Italian seasoning

1 teaspoon garlic powder

1/2 teaspoon crushed red pepper flakes (optional)

1 tablespoon olive oil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare the Zucchini: Wash the zucchinis and slice them lengthwise into thin strips (about 1/4 inch thick). Sprinkle them lightly with salt and lay them on a clean kitchen towel for about 10 minutes to draw out excess moisture.

      Sauté the Veggies: In a skillet, heat the olive oil over medium heat. Add the diced bell peppers and red onions. Sauté for about 3-4 minutes until the vegetables are softened. Add the black olives, Italian seasoning, garlic powder, crushed red pepper flakes, and season with salt and pepper to taste. Cook for another 2 minutes, then remove from heat.

        Assemble the Rolls: Pat the zucchini strips dry with another towel. Take a strip and place a spoonful of the veggie mixture on one end, followed by a sprinkle of both mozzarella and Parmesan cheese. Roll it tightly and place it seam-side down on the prepared baking sheet. Repeat with the remaining zucchini strips.

          Bake the Rolls: Once all the rolls are assembled, bake them in the preheated oven for about 15-20 minutes, or until the rolls are tender and the cheese is bubbly and slightly golden.

            Serve: Remove from the oven and let the rolls cool for a few minutes. Serve warm with extra marinara sauce on the side for dipping. Garnish with fresh basil leaves if desired.
