2 medium zucchinis, sliced into half-moons

1 pint cherry tomatoes, halved

1 small red onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, diced

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

1/4 cup fresh basil leaves, torn (for garnish)

Optional: Grated Parmesan cheese for serving

Heat the Olive Oil: In a large skillet, heat the olive oil over medium heat. Once hot, add chopped red onion and sauté for about 2-3 minutes until softened.

    Add Garlic and Peppers: Stir in the minced garlic and diced red bell pepper. Cook for another 3-4 minutes, stirring occasionally, until the peppers start to soften.

      Incorporate Zucchini: Add the sliced zucchinis to the skillet. Sauté for about 5 minutes, allowing them to soften and become slightly golden.

        Mix in Tomatoes and Herbs: Add the halved cherry tomatoes, dried oregano, and dried basil to the skillet. Stir well to combine all the ingredients and season with salt and pepper to taste.

          Cook and Finish: Continue to cook for an additional 5-7 minutes until the tomatoes burst and everything is well combined. If the mixture seems dry, you can add a splash of water or vegetable broth.

            Garnish and Serve: Remove from heat and transfer to a serving dish. Scatter torn fresh basil over the top and, if desired, sprinkle some grated Parmesan cheese.
