3 medium zucchinis

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 large egg

2 cups marinara sauce (store-bought or homemade)

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

Fresh basil leaves, for garnish

Olive oil, for drizzling

Prepare the Zucchini: Preheat your oven to 375°F (190°C). Trim the ends of the zucchinis and slice them lengthwise into thin strips (about 1/4 inch thick) using a mandolin or a sharp knife. To prevent excess moisture, sprinkle salt on the strips, let them sit for 10-15 minutes, then pat dry with paper towels.

    Make the Cheese Filling: In a mixing bowl, combine the ricotta cheese, half of the mozzarella, Parmesan cheese, egg, minced garlic, oregano, basil, and a pinch of salt and pepper. Stir until well combined.

      Assemble the Rolls: Spread a thin layer of marinara sauce at the bottom of a 9x13 baking dish. Take one zucchini strip, place about a tablespoon of the cheese filling on one end, and carefully roll it up. Place the roll seam side down in the baking dish. Repeat with the remaining zucchini strips.

        Add Sauce and Cheese: Once all the rolls are in the dish, pour the remaining marinara sauce over the top, ensuring that they are well-coated. Sprinkle the rest of the mozzarella cheese evenly over the sauce.

          Bake: Cover the dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
