Zucchini Cheddar Breakfast Bake

2 medium zucchinis, grated

1 cup sharp cheddar cheese, shredded

1/2 cup mozzarella cheese, shredded

4 large eggs

1/2 cup whole milk

1/4 cup onions, finely chopped

1/2 cup bell pepper, diced (any color)

1 clove garlic, minced

1 teaspoon dried oregano

1/2 teaspoon cayenne pepper (optional, for a kick)

Salt and pepper to taste

1/4 cup fresh parsley, chopped (for garnish)

Cooking spray or olive oil for greasing

Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish with cooking spray or olive oil.

    Prepare the Zucchini: Grate the zucchinis using a box grater. Place the grated zucchini in a clean dish towel or cheesecloth and squeeze out the excess moisture. This step is important to prevent a soggy bake.

      Sauté the Vegetables: In a skillet over medium heat, add a touch of olive oil. Sauté the chopped onions and bell peppers for about 3-4 minutes until they begin to soften. Add the minced garlic and sauté for another 1-2 minutes until fragrant. Remove from heat and allow to cool slightly.

        Whisk the Eggs: In a large mixing bowl, crack the eggs and whisk them until well combined. Stir in the whole milk, oregano, cayenne pepper (if using), salt, and pepper.

          Combine Ingredients: Add the grated zucchini, sautéed vegetable mixture, and both the sharp cheddar and mozzarella cheese to the egg mixture. Stir everything until well combined.

            Transfer to Baking Dish: Pour the mixture into the prepared baking dish, spreading it evenly.
