Ingredients

1 lb large shrimp, peeled and deveined

2 ripe avocados, diced

1 medium cucumber, diced

1 cup cherry tomatoes, halved

1/4 red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 lime, juiced

2 tablespoons olive oil

1 teaspoon chili powder

1/2 teaspoon garlic powder

Salt and pepper, to taste

Optional: Crushed tortilla chips for topping

Instructions

Prepare the shrimp: In a medium bowl, combine the shrimp with olive oil, chili powder, garlic powder, salt, and pepper. Toss to coat the shrimp evenly.

Cook the shrimp: Heat a large skillet over medium-high heat. Add the seasoned shrimp and cook for about 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat and let them cool slightly.

Mix the salad: In a large bowl, combine the diced avocados, cucumber, cherry tomatoes, red onion, and cilantro.

Add the shrimp: Once the shrimp are slightly cooled, add them to the vegetable mixture.

Dress the salad: Squeeze the lime juice over the salad and gently toss everything together to combine. Taste and adjust seasoning with more salt and pepper if desired.

Serve: Divide the salad among plates or bowls. If using, sprinkle crushed tortilla chips on top for a delightful crunch.
