1 ½ cups jasmine rice

3 cups vegetable broth (or water)

1 teaspoon olive oil

1 lime (zested and juiced)

1 cup fresh cilantro, chopped

1 small red onion, finely diced

1 cup black beans, drained and rinsed

1 cup cherry tomatoes, halved

1 avocado, sliced

1 jalapeño, finely diced (optional for spice)

Salt and pepper, to taste

Optional toppings: crumbled feta cheese, sour cream, or salsa

Instructions
 

Cook the Rice: In a medium saucepan, combine the jasmine rice and vegetable broth (or water). Bring to a boil, then reduce to low heat, cover, and let simmer for about 15 minutes, or until the rice is tender and the liquid is absorbed.
