Zesty Lemon Chickpea Pasta

Ingredients
  

8 oz (225 g) spaghetti or any pasta of your choice

1 can (15 oz) chickpeas, drained and rinsed

2 tbsp olive oil

3 cloves garlic, minced

1 tsp red pepper flakes (adjust to taste)

Zest of 1 lemon

Juice of 1 large lemon

1 cup cherry tomatoes, halved

1 ½ cups fresh baby spinach

¼ cup fresh parsley, chopped

Salt and pepper to taste

Grated Parmesan cheese (optional, for serving)

Lemon wedges (for garnish)

Instructions
 

Cook the Pasta:

    Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest.

      Sauté Chickpeas:

        In a large skillet over medium heat, add 2 tbsp of olive oil. Once hot, add the drained chickpeas. Sauté for about 5 minutes until they turn golden brown and slightly crispy.

          Add Garlic and Spices:

            Add minced garlic and red pepper flakes to the skillet. Sauté for another 1-2 minutes until the garlic is fragrant but not burnt.

              Incorporate Lemon:

                Stir in the lemon zest and juice into the chickpea mixture. Mix well to combine and let it cook for about 3 minutes so the flavors meld.

                  Add Tomatoes and Spinach:

                    Add the halved cherry tomatoes and fresh spinach to the skillet. Cook for about 2-3 minutes, stirring occasionally, until the spinach wilts and the tomatoes soften.

                      Combine Pasta:

                        Add the drained pasta to the skillet. Toss everything together, adding reserved pasta water little by little if the mixture seems dry. Season with salt and pepper to taste.

                          Garnish:

                            Remove from heat and stir in the chopped parsley. Serve immediately, topped with grated Parmesan cheese and extra lemon wedges on the side for additional zing.
