1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

16 oz (2 packages) cream cheese, softened

1 cup white chocolate, chopped

½ cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

1 cup fresh blueberries (plus extra for topping)

For the Blueberry Sauce:

1 cup fresh blueberries

½ cup granulated sugar

1 tablespoon lemon juice

1 tablespoon cornstarch (optional, for thickening)

Instructions
 

Preheat the Oven:

    - Preheat your oven to 325°F (162°C).

      Prepare the Crust:

        - In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.

          - Press the crumb mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

            - Bake for 10 minutes. Remove from the oven and set aside to cool slightly.

              Melt the White Chocolate:

                - In a microwave-safe bowl, melt the white chocolate in 30-second intervals, stirring in between until smooth. Allow it to cool slightly.

                  Make the Cheesecake Filling:

                    - In a large mixing bowl, beat the softened cream cheese with sugar until smooth and creamy.

                      - Add in the melted white chocolate and vanilla extract, beating until fully combined.

                        - Add the eggs one at a time, mixing on low speed after each addition.

                          - Finally, mix in the sour cream and gently fold in the fresh blueberries (reserve a handful for topping).
