1 ½ cups all-purpose flour

1 cup granulated sugar

¼ cup unsweetened cocoa powder

1 tsp baking soda

½ tsp salt

1 cup water

⅓ cup vegetable oil (or melted coconut oil)

1 tbsp white or apple cider vinegar

1 tsp vanilla extract

½ cup chocolate chips (optional, for extra chocolate goodness)

Powdered sugar or whipped cream (for serving)

Instructions
 

Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

    In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt until well combined.

      Make a well in the center of the dry ingredients. Pour in the water, oil, vinegar, and vanilla extract. Mix until the batter is smooth and silky, making sure there are no lumps. If you're using chocolate chips, fold them in gently at this stage.

        Pour the batter into the prepared cake pan. Tap it gently on the counter to eliminate any air bubbles.

          Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean. The cake should spring back when lightly touched.

            Remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
