Ingredients
  

2 cups cherry tomatoes, halved

200g feta cheese, crumbled

1/4 red onion, thinly sliced

1/4 cup fresh basil leaves, torn

2 tablespoons extra-virgin olive oil

1 tablespoon balsamic vinegar

1 teaspoon honey or maple syrup

Salt and black pepper, to taste

Optional: 1/4 cup sliced black olives

Instructions
 

In a large mixing bowl, combine the halved cherry tomatoes, crumbled feta cheese, thinly sliced red onion, and torn basil leaves.

    In a small bowl, whisk together the extra-virgin olive oil, balsamic vinegar, honey (or maple syrup), salt, and black pepper until emulsified.

      Pour the dressing over the tomato and feta mixture and gently toss until all ingredients are well coated.

        If using, fold in the sliced black olives for an extra pop of flavor.

          Taste and adjust seasoning if necessary, adding more salt, pepper, or honey to your liking.
