2 tbsp olive oil

1 medium onion, diced

3 cloves garlic, minced

1 carrot, finely diced

1 celery stalk, finely diced

1 can (28 oz) crushed tomatoes (or 2 lbs fresh ripe tomatoes, peeled and chopped)

1 cup vegetable or chicken broth

1 cup heavy cream (or coconut milk for a vegan option)

1/4 cup fresh basil leaves, chopped (plus extra for garnish)

1 tsp sugar (optional)

Salt and pepper to taste

Crusty bread or grilled cheese for serving

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery. Sauté until the vegetables are soft and translucent, about 5-7 minutes. Add the minced garlic and cook for another minute, until fragrant.

    Add Tomatoes: Stir in the crushed tomatoes and cook for an additional 5 minutes. If using fresh tomatoes, ensure they are well incorporated.

      Simmer: Pour in the vegetable or chicken broth and bring the mixture to a gentle simmer. Season with salt and pepper, and add the sugar if a sweeter balance is desired. Simmer for 20 minutes to allow the flavors to meld.

        Blend Smooth: Remove the pot from heat. Using an immersion blender, blend the soup until smooth and velvety. Alternatively, transfer the soup in batches to a regular blender. (Be careful as the soup will be hot!)

          Add Cream and Basil: Return the blended soup to the pot over low heat. Stir in the heavy cream and chopped basil. Allow the soup to warm through for 5 more minutes. Taste and adjust seasoning with additional salt and pepper if required.

            Serve: Ladle the bisque into bowls, garnish with extra basil leaves, and serve with crusty bread or a grilled cheese sandwich for a comforting meal.
