2 tbsp vegetable oil

1 cup bell peppers (sliced: red, yellow, and green)

1 cup broccoli florets

1/2 cup snap peas

1 medium carrot (julienned)

1 cup baby corn (hearts cut)

3 green onions (sliced)

3 cloves garlic (minced)

2 tbsp soy sauce

1 tbsp hoisin sauce

1 tbsp sesame oil

1 tsp grated fresh ginger

1 tsp chili flakes (optional)

Sesame seeds (for garnish)

Instructions
 

Cook the Noodles: In a large pot, bring water to a boil. Add the rice noodles and cook according to package instructions until al dente. Drain and rinse under cold water. Set aside.

    Prepare the Stir-Fry Sauce: In a small bowl, whisk together soy sauce, hoisin sauce, sesame oil, minced garlic, grated ginger, and chili flakes. Set aside.

      Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

        Sauté Vegetables: Add the sliced bell peppers, broccoli florets, snap peas, carrots, and baby corn to the skillet. Stir-fry for about 5-7 minutes, or until vegetables are bright and tender-crisp.

          Combine Noodles and Sauce: Add the cooked noodles to the skillet with the vegetables. Pour in the stir-fry sauce and toss everything together, ensuring the noodles and vegetables are well-coated in the sauce.
