1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 cup almond milk (or any plant-based milk)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper, to taste

1 cup buffalo sauce (vegan-friendly)

For the Tacos:

8 small corn tortillas

1 avocado, sliced

1 cup red cabbage, shredded

1/2 cup fresh cilantro, chopped

1/2 cup vegan ranch dressing (store-bought or homemade)

Lime wedges, for serving

Preheat the Oven: Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

    Prepare the Batter: In a large bowl, whisk together the flour, almond milk, garlic powder, onion powder, smoked paprika, salt, and pepper until smooth. The batter should have a pancake-like consistency.

      Coat the Cauliflower: Dip each cauliflower floret into the batter, ensuring it is well-coated. Allow any excess batter to drip off before placing it on the prepared baking sheet.

        Bake the Cauliflower: Once all florets are on the baking sheet, bake for 20-25 minutes, turning halfway, until golden and crispy.

          Buffalo Sauce Coating: In a large bowl, toss the baked cauliflower with the buffalo sauce until fully coated. Return to the baking sheet and bake for an additional 10 minutes to crisp up the sauce.
