Vegan Avocado Ranch Wraps

Ingredients
  

2 large whole wheat tortillas

1 ripe avocado, mashed

1/4 cup vegan sour cream

1 tablespoon fresh dill, chopped

1 tablespoon fresh chives, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon apple cider vinegar

Salt and pepper, to taste

1 cup mixed greens (spinach, arugula, lettuce)

1/2 cup cherry tomatoes, halved

1/2 cup cucumber, thinly sliced

1/2 cup shredded carrots

Optional: 1/2 cup sliced black olives

Instructions
 

Prepare the Vegan Ranch Dressing: In a small mixing bowl, combine the mashed avocado, vegan sour cream, dill, chives, garlic powder, onion powder, apple cider vinegar, salt, and pepper. Mix until smooth and creamy. Adjust seasoning to taste.

    Prepare the Wrap Ingredients: Wash and dry the mixed greens, cherry tomatoes, cucumber, and carrots. Cut the cherry tomatoes in half and slice the cucumber thinly.

      Assemble the Wraps:

        - Lay a whole wheat tortilla flat on a clean surface.

          - Spread a generous layer of the avocado ranch dressing evenly across the tortilla.

            - On top of the dressing, add a handful of mixed greens, followed by the halved cherry tomatoes, sliced cucumber, shredded carrots, and optional olives.

              Wrap It Up: Carefully fold in the sides of the tortilla and roll it up tightly from the bottom to form a wrap. Make sure the filling is secure inside.

                Slice & Serve: Cut the wrap in half diagonally and serve immediately. If preparing in advance, wrap in parchment paper or foil to keep fresh until serving.
