Ingredients

8 oz linguine pasta

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

4 tbsp unsalted butter, divided

3 cloves garlic, minced

1 tsp fresh ginger, minced

1 tsp smoked paprika

1 tsp cumin

½ tsp cayenne pepper (adjust to taste)

1 tsp salt

½ tsp black pepper

1 cup heavy cream

1 cup chicken broth

1 cup cherry tomatoes, halved

1 cup fresh spinach

½ cup grated Parmesan cheese

¼ cup fresh parsley, chopped (for garnish)

1 tbsp lemon juice

Instructions

Cook the Linguine: In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Drain and set aside.

Prepare the Chicken: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the chicken pieces and season with smoked paprika, cumin, cayenne, salt, and black pepper. Sauté until the chicken is browned and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set it aside.

Sauté Aromatics: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add minced garlic and ginger, cooking for about 1 minute until fragrant.

Create the Sauce: Pour in the chicken broth and bring it to a simmer. Stir in the heavy cream, and let it reduce slightly for about 3-5 minutes.

Add Vegetables and Chicken: Stir in the cherry tomatoes and fresh spinach. Cook until the spinach has wilted and the tomatoes are soft, about 2-3 minutes. Return the cooked chicken to the skillet, mixing everything well.

Combine Pasta and Sauce: Add the drained linguine to the skillet, tossing gently to coat the pasta in the creamy sauce. Add the grated Parmesan cheese and lemon juice, tossing again until everything is well combined and heated through.

Garnish and Serve: Remove from heat, sprinkle with chopped parsley, and add a little extra Parmesan if desired. Serve immediately and enjoy the rich, buttery goodness!
