Turkey and Mushroom Penne

12 oz penne pasta

1 lb ground turkey

8 oz cremini mushrooms, sliced

1 medium onion, finely chopped

3 cloves of garlic, minced

1 cup chicken broth

1 cup heavy cream

1 tsp dried thyme

1 tsp dried oregano

1/2 tsp red pepper flakes (optional for heat)

1 cup fresh spinach, roughly chopped

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Olive oil (for cooking)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Veggies: In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

      Brown the Turkey: Add the ground turkey to the skillet, breaking it up with a spatula. Season with salt, pepper, thyme, oregano, and red pepper flakes. Cook until the turkey is browned and cooked through, about 5-7 minutes.

        Cook the Mushrooms: Add the sliced cremini mushrooms to the skillet and cook for another 3-4 minutes, until they release their moisture and become tender.

          Create the Sauce: Pour in the chicken broth and bring the mixture to a simmer. Let it cook for about 5 minutes. Then, lower the heat and stir in the heavy cream. Allow it to simmer for another 3-4 minutes until the sauce thickens slightly.

            Combine Everything: Add the cooked penne pasta and fresh spinach to the skillet, tossing to combine everything. Cook for another 2-3 minutes until the spinach wilts and the pasta is heated through.

              Finish with Cheese: Stir in the grated Parmesan cheese until melted and well incorporated. Taste and adjust seasonings as necessary.

                Serve and Garnish: Serve the Turkey and Mushroom Penne hot, garnished with fresh parsley and additional Parmesan if desired.
