Ingredients

1 cup coconut milk (canned or carton)

1/2 cup almond milk (or any plant-based milk)

1/4 cup chia seeds

2 tablespoons maple syrup (or honey, if not vegan)

1 teaspoon vanilla extract

1/4 teaspoon salt

1 ripe mango, diced

1 ripe kiwi, diced

1/2 banana, sliced

1/4 cup shredded coconut (unsweetened)

Fresh mint leaves for garnish (optional)

Instructions

Combine the Liquids: In a mixing bowl, whisk together the coconut milk, almond milk, maple syrup, vanilla extract, and salt until well blended.

Add Chia Seeds: Stir in the chia seeds, ensuring they are evenly dispersed in the liquid.

Chill the Mixture: Cover the bowl with plastic wrap or transfer the mixture to individual jars. Refrigerate for at least 4 hours or overnight, allowing the chia seeds to absorb the liquid and thicken.

Layer the Pudding: Once the chia pudding has set, remove it from the refrigerator. Give it a good stir to break up any clumps.

Prepare the Fruit Toppings: Dice the mango, kiwi, and slice the banana. Set aside.

Assemble the Delight: In serving bowls or jars, layer the chia pudding with the diced mango, kiwi, and banana. Add shredded coconut on top.

Garnish: Optional: garnish with fresh mint leaves to add a pop of color and freshness.

Serve and Enjoy: Enjoy immediately as a refreshing breakfast, snack, or dessert!
