Ingredients

1 cup coconut milk (full-fat or light)

1/2 cup almond milk (or any other plant-based milk)

1/3 cup chia seeds

2 tablespoons maple syrup (or honey)

1 ripe mango, diced

1 teaspoon vanilla extract

A pinch of sea salt

Fresh fruit for topping (e.g., kiwi, pineapple, banana)

Unsweetened shredded coconut (for garnish)

Mint leaves (for garnish)

Instructions

Mix the Base: In a mixing bowl, combine the coconut milk, almond milk, maple syrup, vanilla extract, and a pinch of sea salt. Whisk until well combined.

Add Chia Seeds: Stir in the chia seeds ensuring they are evenly distributed in the liquid. This will help them absorb the moisture and expand.

Rest: Cover the bowl with plastic wrap or transfer the mixture into a jar, and refrigerate for at least 4 hours, or overnight if possible. This step allows the chia seeds to swell and create a pudding-like consistency.

Prepare the Mango: While the pudding sets, peel and dice the ripe mango into small cubes. You can save some pieces for topping later.

Layer the Pudding: Once the chia mix has thickened, give it a good stir. You can fold the diced mango into the pudding, or layer it by alternating the chia pudding with mango cubes in serving glasses.

Garnish: Top each glass with additional fresh fruit, a sprinkle of shredded coconut, and a mint leaf for a refreshing touch.

Serve: Enjoy your Tropical Bliss Mango Chia Pudding chilled as a nutritious breakfast or a delightful dessert!
