For the Graham Cracker Crust:

1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

For the Key Lime Filling:

1 can (14 oz) sweetened condensed milk

½ cup sour cream

¾ cup freshly squeezed key lime juice (about 4-6 key limes)

Zest of 2 key limes

3 large egg yolks

For the Cheese Layer:

8 oz cream cheese, softened

½ cup powdered sugar

1 tsp vanilla extract

½ cup heavy cream

For the Whipped Topping:

1 cup heavy cream

2 tbsp powdered sugar

Zest of 1 key lime for garnish

Lime slices for garnish (optional)

Instructions
 

Prepare the Graham Cracker Crust:

    - Preheat your oven to 350°F (175°C).

      - In a bowl, combine graham cracker crumbs and granulated sugar. Pour in the melted butter and stir until the mixture resembles wet sand.

        - Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Bake for 8-10 minutes, until golden. Remove from the oven and allow to cool completely.

          Make the Key Lime Filling:

            - In a medium mixing bowl, whisk together the sweetened condensed milk, sour cream, key lime juice, zest, and egg yolks until smooth.

              - Pour the filling into the cooled graham cracker crust and spread evenly.

                - Bake in the oven for 10-12 minutes until the filling is just set. Remove from the oven and allow to cool. Refrigerate for at least 2 hours to firm up.

                  Prepare the Cream Cheese Layer:

                    - While the key lime filling cools, beat the cream cheese in a medium bowl until smooth.

                      - Gradually add powdered sugar and vanilla extract, beating until fully combined.

                        - In a separate bowl, whip the heavy cream until soft peaks form, then gently fold this whipped cream into the cream cheese mixture until fully incorporated.

                          - Once the key lime layer is firm, spread the cream cheese layer on top and smooth with a spatula. Chill for another hour.

                            Make the Whipped Topping:

                              - In a large bowl, whip the heavy cream with powdered sugar until soft peaks form.

                                - Once the cream cheese layer has set, spread the whipped topping evenly over the cheese layer.

                                  - Garnish with key lime zest and lime slices if desired.

                                    Final Chill and Serve:

                                      - Place the pie back in the refrigerator and allow to chill for at least another hour before slicing.
