12 oz cheese tortellini (fresh or frozen)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red bell pepper, diced

1/2 cup black olives, sliced

1/4 cup red onion, thinly sliced

1/2 cup mozzarella balls, halved

1/4 cup fresh basil, chopped

1/4 cup Parmesan cheese, grated

1/4 cup olive oil

2 tbsp balsamic vinegar

1 tsp garlic powder

Cook the Tortellini: In a large pot, bring salted water to a boil. Add the tortellini and cook according to package instructions (usually around 4-5 minutes for fresh). Once cooked, drain and rinse under cold water to halt the cooking process. Set aside.
