Ingredients

1 cup canned tomato soup

1/2 cup vegetable oil

1 cup granulated sugar

2 large eggs

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1/2 cup chopped walnuts or pecans (optional)

1/2 cup raisins or currants (optional)

Cream cheese frosting (for serving)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan or two 9-inch round cake pans.

Mix Wet Ingredients: In a large mixing bowl, combine the canned tomato soup, vegetable oil, and granulated sugar. Mix them together until well blended. Add in the eggs, one at a time, beating well after each addition until the mixture is light and fluffy.

Sift Dry Ingredients: In another bowl, sift together the all-purpose flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.

Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined. Be careful not to overmix. If you're using walnuts or raisins, fold them in gently at this stage.

Pour and Bake: Pour the batter into the prepared baking pan(s) and spread it evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Cool the Cake: Once baked, remove the cake from the oven and allow it to cool in the pan for about 10 minutes. Then transfer to a wire rack to cool completely.

Frost & Serve: Once the cake has cooled, spread a generous layer of cream cheese frosting on top (or between layers if you used round pans). Slice and serve your unique Tomato Soup Cake to your guests—prepare for compliments!
