3 medium ripe tomatoes, diced

2 medium ripe peaches, pitted and sliced

1 medium red onion, thinly sliced

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon balsamic vinegar

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

½ teaspoon salt

¼ teaspoon black pepper

1 cup fresh arugula or spinach

½ cup crumbled feta cheese (optional)

Fresh basil leaves for garnish

Instructions
 

Prep the Ingredients: Start by washing and cutting the tomatoes and peaches. Slice the red onion and mince the garlic. Set aside.

    Heat the Skillet: In a large skillet, heat the olive oil over medium heat. Once hot, add the sliced red onion and sauté for about 3-4 minutes until they turn translucent.

      Add Garlic: Stir in the minced garlic and cook for an additional 30 seconds, stirring constantly to prevent it from burning.

        Incorporate Tomatoes and Peaches: Add the diced tomatoes and sliced peaches to the skillet. Stir gently to combine with the onion and garlic mixture. Cook for about 5-7 minutes until the tomatoes release their juices and the peaches soften slightly.

          Season the Mixture: Drizzle the balsamic vinegar over the skillet mixture, followed by adding the thyme, salt, and pepper. Stir everything together and let it cook for another 2 minutes on low heat, allowing the flavors to meld.

            Add Greens: Gently fold in the fresh arugula or spinach, cooking just until wilted (about 1-2 minutes). Remove the skillet from heat.
