Tofu Lettuce Wraps with Strawberry Glaze

14 oz firm tofu, drained and pressed

2 tablespoons soy sauce

1 tablespoon sesame oil

2 cloves garlic, minced

1 inch ginger, grated

1 small onion, finely chopped

1 bell pepper (any color), diced

1 carrot, finely grated

1/4 cup green onions, chopped

Salt and pepper to taste

For the Strawberry Glaze:

1 cup fresh strawberries, hulled and sliced

2 tablespoons honey or maple syrup (for a vegan option)

1 tablespoon balsamic vinegar

1 teaspoon cornstarch mixed with 2 tablespoons water (for thickening)

Pinch of salt

For the Lettuce Wraps:

1 head of butter lettuce or romaine lettuce, leaves separated

Optional toppings: chopped peanuts, cilantro, lime wedges

Prepare the Tofu Filling:

    - Start by crumbling the pressed tofu into bite-sized pieces.

      - In a large skillet, heat sesame oil over medium heat. Add chopped onions and sauté until translucent, about 3 minutes.

        - Add the minced garlic and grated ginger, cooking for another minute until fragrant.

          - Stir in crumbled tofu, diced bell pepper, and grated carrot. Cook for about 5-7 minutes until the tofu is slightly crispy.

            - Pour in soy sauce, and season with salt and pepper to taste. Mix well and remove from heat.

              Make the Strawberry Glaze:

                - In a small saucepan over low to medium heat, combine the sliced strawberries, honey (or maple syrup), and balsamic vinegar.

                  - Simmer for about 5-7 minutes until strawberries soften and release their juices.

                    - Stir in the cornstarch mixture and continue to cook for an additional 1-2 minutes, or until the glaze thickens. Remove from heat and set aside.
