2 cups rolled oats

1 cup unsweetened applesauce

1 large apple, diced (preferably Gala or Honeycrisp)

1/4 cup almond milk (or any milk of your choice)

1/4 cup maple syrup (adjust for sweetness)

1 teaspoon ground cinnamon

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/2 teaspoon baking powder

1/4 cup chopped nuts (walnuts or pecans, optional)

1/4 cup raisins or dried cranberries (optional)

Apple slices and cinnamon for topping (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with silicone or paper liners.

    Mix Wet Ingredients: In a large mixing bowl, combine the applesauce, almond milk, maple syrup, vanilla extract, and diced apple. Mix until well combined.

      Prepare Dry Ingredients: In another bowl, whisk together the rolled oats, ground cinnamon, salt, and baking powder. If you are using nuts or dried fruits, add them to the dry mixture as well.

        Combine Mixtures: Pour the dry ingredients into the wet mixture and stir until just combined. The oats should absorb the moisture and form a thick batter.

          Fill Muffin Tin: Spoon the mixture evenly into the prepared muffin tin, filling each cup about three-quarters full. If desired, top each cup with additional apple slices and a sprinkle of cinnamon.

            Bake: Place the muffin tin in the preheated oven and bake for about 25-30 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.
