1 cup mascarpone cheese

1 cup heavy cream

1 cup chocolate graham cracker crumbs

1/2 cup brewed espresso (cooled)

1/4 cup powdered sugar

1 teaspoon vanilla extract

1 tablespoon coffee liqueur (optional)

Cocoa powder, for dusting

Dark chocolate shavings, for garnish (optional)

Instructions
 

Whip the Cream: In a large mixing bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar while continuing to whip until stiff peaks form. Set aside.

    Mix the Base: In another bowl, combine the mascarpone cheese, brewed espresso, vanilla extract, and coffee liqueur (if using). Mix until smooth and creamy.

      Combine Mixtures: Gently fold the whipped cream into the mascarpone mixture in three parts, being careful not to deflate the whipped cream. Continue folding until fully combined.

        Add Graham Cracker: Stir in the chocolate graham cracker crumbs until everything is evenly distributed, creating a dough-like consistency.

          Chill the Mixture: Cover the bowl with plastic wrap and refrigerate for about 2 hours or until the mixture is firm enough to handle.

            Form the Truffles: Once chilled, use a small cookie scoop or your hands to form the mixture into bite-sized balls. Place them on a parchment-lined baking sheet.

              Dust with Cocoa: Roll each truffle lightly in cocoa powder until coated, which adds a rich coffee flavor.

                  Chill Again: Place the coated truffles back in the fridge for at least 30 minutes to firm up before serving.
