1 lb ground chicken

2 tablespoons vegetable oil

3 cloves garlic, minced

1/2 cup red bell pepper, finely diced

1/2 cup carrots, grated

2 green onions, sliced (whites and greens separated)

1 tablespoon fresh ginger, minced

3 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon fish sauce (optional)

1 tablespoon brown sugar

1 tablespoon lime juice

1 teaspoon sesame oil

Fresh cilantro leaves, for garnish

For the Peanut Sauce:

1/2 cup creamy peanut butter

2 tablespoons soy sauce

1 tablespoon honey (or maple syrup for vegan)

1 tablespoon rice vinegar

1 teaspoon sriracha (adjust to taste)

2-3 tablespoons warm water (to thin sauce if needed)

For the Wraps:

1 head of butter lettuce (or iceberg lettuce for crunch)

Fresh mint leaves, for garnish (optional)

Instructions
 

Prepare the Peanut Sauce: In a medium bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, and sriracha until smooth. If the sauce is thick, gradually add warm water, one tablespoon at a time, until you reach your desired consistency. Set aside.

    Cook the Chicken Mixture: Heat the vegetable oil in a large skillet over medium-high heat. Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant. Add the ground chicken, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes.

      Incorporate Vegetables: Stir in the red bell pepper, grated carrots, and the whites of the green onions. Cook for 2-3 minutes until the vegetables soften.

        Season the Filling: Reduce the heat to medium and add soy sauce, fish sauce (if using), brown sugar, lime juice, and sesame oil. Mix well and cook for another 2 minutes until everything is well combined. Remove from heat.

          Assemble the Wraps: Take the butter lettuce leaves and spoon a generous amount of the chicken filling into each leaf. Drizzle with peanut sauce and garnish with cilantro leaves, green onion greens, and mint leaves if desired.

            Serve: Arrange the filled lettuce wraps on a platter and serve immediately with extra peanut sauce on the side for dipping.
