2 lbs lamb shoulder, cut into 2-inch pieces

2 tablespoons olive oil

1 large onion, finely chopped

4 garlic cloves, minced

1 teaspoon ground ginger

1 teaspoon ground cumin

1 teaspoon ground cinnamon

1 teaspoon ground coriander

1/2 teaspoon cayenne pepper (adjust to taste)

1 teaspoon turmeric

1 can (14 oz) diced tomatoes, drained

2 cups beef or chicken broth

1 cup dried apricots, chopped

1/2 cup almonds, toasted and roughly chopped

1 cup chickpeas, drained and rinsed

Salt and pepper, to taste

Fresh cilantro or parsley, for garnish

Cooked couscous or rice, for serving

Instructions
 

Sear the Lamb: In a large tagine or heavy pot, heat olive oil over medium-high heat. Add the lamb pieces in batches, searing them until browned on all sides. Transfer the browned lamb to a plate.

    Cook the Aromatics: In the same pot, add the chopped onion and cook for about 5 minutes until softened. Stir in the minced garlic and cook for another minute until fragrant.

      Spice It Up: Sprinkle in the ground ginger, cumin, cinnamon, coriander, cayenne pepper, and turmeric. Stir continuously for about 2 minutes to toast the spices and release their flavors.

        Add Tomatoes and Broth: Return the browned lamb to the pot and add the drained diced tomatoes and broth. Stir well to combine all ingredients.

          Incorporate Fruits and Beans: Mix in the chopped dried apricots and chickpeas. Season the mixture with salt and pepper to taste.

            Slow Cook the Tagine: Bring the mixture to a simmer, cover the pot, and reduce the heat to low. Allow it to cook gently for about 2 to 2.5 hours, or until the lamb is fork-tender and the flavors have melded beautifully. Stir occasionally, adding a little water if necessary to prevent sticking.
