Ingredients

1 cup long-grain brown rice

2 cups vegetable broth

1 can (15 oz) black beans, rinsed and drained

1 tbsp olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp cumin

1 tsp chili powder

1/2 tsp smoked paprika

1/4 tsp salt

1/4 tsp black pepper

1 cup corn (fresh or frozen)

1 bell pepper (any color), diced

1 avocado, diced

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Optional toppings: sour cream, shredded cheese, salsa, jalapeños

Instructions

Cook the Rice: In a medium saucepan, bring the vegetable broth to a boil. Add the brown rice, reduce the heat to low, cover, and simmer for about 45-50 minutes or until the rice is tender and the liquid is absorbed. Fluff with a fork and set aside.

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.

Add Spices and Beans: Stir in the cumin, chili powder, smoked paprika, salt, and pepper. Cook for 1 minute to toast the spices, then add the black beans, corn, and diced bell pepper. Stir to combine and cook for about 5-7 minutes until the peppers are tender and everything is heated through.

Assemble the Bowl: In a large serving bowl or individual bowls, layer the cooked rice as the base. Top with the sautéed black bean and vegetable mixture.

Finish with Fresh Toppings: Add diced avocado, halved cherry tomatoes, and fresh cilantro on top. Squeeze lime juice over the bowl for added flavor.

Optional Garnishes: Serve with optional toppings like sour cream, shredded cheese, salsa, or sliced jalapeños according to your preference.

Enjoy your delicious and vibrant Tasty Taco Bowl!
