Tangy Tzatziki Turkey Meatballs

1 lb ground turkey

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1/4 cup finely chopped fresh parsley

1 tsp dried oregano

1/2 tsp salt

1/2 tsp black pepper

1/2 tsp cayenne pepper (optional for a kick)

1 egg, lightly beaten

1 tbsp olive oil (for cooking)

For the Tzatziki Sauce:

1 cup Greek yogurt

1 cucumber, grated and excess water squeezed out

2 cloves garlic, minced

1 tbsp lemon juice

1 tbsp chopped fresh dill

Salt and pepper to taste

Preheat the Oven: Start by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Meatball Mixture: In a large bowl, combine the ground turkey, breadcrumbs, grated Parmesan cheese, minced garlic, chopped parsley, oregano, salt, black pepper, cayenne pepper (if using), and the beaten egg. Mix until just combined; avoid overmixing for tender meatballs.

      Form the Meatballs: Using your hands, scoop out a tablespoon of the mixture and roll it into a ball. Place it on the prepared baking sheet. Repeat until all the mixture is used, spacing the meatballs an inch apart.

        Cook the Meatballs: Lightly drizzle the meatballs with olive oil. Bake in the preheated oven for 20-25 minutes, or until they are golden brown and cooked through (internal temperature of 165°F or 74°C).

          Make the Tzatziki Sauce: While the meatballs are baking, prepare the tzatziki sauce. In a mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, chopped dill, and season with salt and pepper. Stir well to combine. Chill in the refrigerator until ready to serve.
