2 cans young green jackfruit in water or brine (not syrup)

1 tablespoon olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup barbecue sauce (store-bought or homemade)

1 tablespoon apple cider vinegar

1 tablespoon soy sauce or tamari

1 teaspoon smoked paprika

1 teaspoon chili powder

Salt and pepper, to taste

12 slider buns (whole grain or gluten-free, as preferred)

Fresh coleslaw (store-bought or homemade) for topping

Pickles (optional) for garnish

Prepare the Jackfruit: Drain and rinse the jackfruit thoroughly. Using your hands or a fork, shred the jackfruit pieces into a pulled-like texture. Remove any large seeds and tough core pieces. Set aside.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onions and sauté for about 5 minutes, until they are translucent. Stir in the minced garlic and cook for another minute until fragrant.

      Cook the Jackfruit: Add the shredded jackfruit to the skillet with the onions and garlic. Stir well to combine. Season with smoked paprika, chili powder, salt, and pepper, mixing everything thoroughly.

        Add Sauces: Pour in the barbecue sauce, apple cider vinegar, and soy sauce. Stir to combine, ensuring all jackfruit pieces are coated in the sauce. Allow the mixture to simmer on low heat for about 15-20 minutes, stirring occasionally, until the jackfruit is tender and has absorbed the flavors.

          Assemble the Sliders: While the jackfruit simmers, you can toast the slider buns if desired. Once the jackfruit is ready, spoon a generous amount onto the bottom half of each bun. Top with a spoonful of fresh coleslaw and add pickles if using.
