8 ounces spaghetti

1 pound ground beef or turkey

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 packet taco seasoning (about 1 ounce)

1 can (15 ounces) black beans, rinsed and drained

1 can (14 ounces) diced tomatoes with green chilies

2 cups beef or chicken broth

1 cup corn kernels (frozen or canned)

1 cup shredded cheddar cheese

1 cup sour cream (optional for serving)

Fresh cilantro, chopped (for garnish)

Tortilla chips (for serving)

Cook the Spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook al dente according to package instructions. Drain and set aside.

    Brown the Meat: In a large skillet over medium heat, add the olive oil. Once hot, add the diced onion and sauté for about 3-4 minutes until softened.
