8 oz (about 2 cups) uncooked pasta (rotini or penne works well)

1 lb ground beef or turkey

1 packet taco seasoning (about 1 oz)

1 cup diced onion (about 1 medium onion)

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, undrained

1 cup beef broth (or water)

1 cup black beans, drained and rinsed

1 cup corn (frozen, canned, or fresh)

1 cup shredded cheddar cheese

1 cup lettuce, chopped (for garnish)

1/2 cup sour cream or Greek yogurt (for garnish)

1 avocado, diced (for garnish)

1/4 cup cilantro, chopped (for garnish)

Salt and pepper to taste

Optional: sliced jalapeños, lime wedges, or hot sauce for serving

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.

    Brown the Meat: In a large skillet over medium heat, cook the ground beef or turkey until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.

      Sauté Aromatics: Add diced onion and minced garlic to the skillet with the meat. Sauté for about 2-3 minutes until the onion is translucent and fragrant.

        Add Seasoning and Tomatoes: Stir in the taco seasoning, diced tomatoes (with their juices), and beef broth. Mix well and bring to a simmer. Allow it to cook for about 5 minutes to let the flavors meld.

          Incorporate Beans and Corn: Add the black beans and corn to the skillet. Stir to combine and let it simmer for another 3-4 minutes until everything is heated through.

            Combine with Pasta: Add the cooked pasta to the skillet and mix thoroughly until all the pasta is coated with the flavorful sauce. Cook for an additional 2 minutes to heat everything evenly. Season with salt and pepper to taste.

              Melt the Cheese: Sprinkle shredded cheddar cheese over the top of the pasta mixture. Cover the skillet with a lid and let it sit for about 2-3 minutes, allowing the cheese to melt.
