Ingredients

125g almond flour

225g powdered sugar

100g egg whites (about 3 large eggs)

30g granulated sugar

1/2 tsp cream of tartar

1 tsp vanilla extract

A few drops of red food coloring

150g unsalted butter (softened)

200g powdered sugar (for filling)

1/2 tsp vanilla extract (for filling)

1-2 tbsp milk (for desired consistency)

Heart-shaped sprinkles (for decoration)

Instructions

Prepare the Baking Sheets: Preheat your oven to 150°C (300°F) and line two baking sheets with parchment paper. You can use a piping bag with a round tip for shaping the macarons.

Make the Macaron Batter: In a large bowl, sift together the almond flour and powdered sugar. This eliminates lumps and ensures a smooth texture.

Whip the Egg Whites: In a separate bowl, whisk the egg whites with a hand mixer on medium speed until foamy. Add the cream of tartar and continue whisking until soft peaks form. Gradually add the granulated sugar while whisking on high speed until you achieve stiff and glossy peaks.

Combine Mixtures: Gently fold the sifted almond flour mixture into the whipped egg whites using a spatula. Be careful to incorporate without deflating the meringue. Add the vanilla extract and red food coloring, folding until the mixture flows smoothly like lava.

Pipe the Macarons: Transfer the batter to a piping bag. Pipe small rounds (about 3 cm in diameter) onto the prepared baking sheets, leaving space between each for spreading. Tap the baking sheets gently on the counter to eliminate air bubbles, then let the macarons sit at room temperature for 30-60 minutes, or until lightly dry to the touch.

Bake the Macarons: Bake one sheet at a time in the preheated oven for 15-20 minutes. The macarons should have risen and formed a crust but be careful not to overbake. Once done, let them cool completely on the baking sheet.

Prepare the Filling: In a bowl, beat the softened butter until creamy. Gradually add the powdered sugar, vanilla extract, and milk until you reach a smooth and spreadable consistency. Adjust with more milk if needed.

Assemble the Macarons: Once the shells have cooled, pair them up by size. Pipe a small dollop of filling on the flat side of one shell and sandwich it with another shell.

Decorate: Finish your Sweetheart Macarons with heart-shaped sprinkles on top for an adorable touch!

Chill and Serve: For best flavor, let the assembled macarons sit in the refrigerator for at least 24 hours. Serve them at room temperature and enjoy these delightful treats!
