1 cup (100g) almond flour

1 3/4 cup (200g) powdered sugar

3 large egg whites, at room temperature

1/4 teaspoon cream of tartar

1/2 cup (100g) granulated sugar

Pinch of salt

1 teaspoon vanilla extract

Pink food coloring (gel preferred)

For the Rose Buttercream Filling:

1/2 cup (115g) unsalted butter, softened

2 cups (240g) powdered sugar

2 teaspoons milk

1 teaspoon pure rose water

A few drops of pink food coloring

Instructions
 

Preparing the Macaron Shells:

    - Begin by sifting together the almond flour and powdered sugar in a bowl. This will remove any lumps and create a finer texture. Set aside.

      Whipping the Egg Whites:

        - In a clean mixing bowl, whisk the egg whites with cream of tartar until foamy. Gradually add the granulated sugar, continuing to whisk until stiff peaks form and the mixture is glossy, about 5-7 minutes.

          - Add the vanilla extract and a few drops of pink food coloring, gently folding until the color is evenly distributed.

            Combining Mixtures:

              - Carefully fold the almond flour mixture into the whipped egg whites in three additions. Use a spatula and make a ‘J’ motion to avoid over-mixing. The batter should flow slowly like lava and hold a figure-eight shape.

                Piping the Macarons:

                  - Transfer the batter to a piping bag fitted with a round tip (about 1/2 inch wide).

                    - Line two baking sheets with parchment paper or silicone baking mats. Pipe small circles (about 1.5 inches in diameter) leaving space between each one.

                        Baking the Macarons:

                                      Assembling the Macarons:

                                        - Once the macaron shells are completely cool, pair them into matching sizes.

                                          - Pipe a small dollop of rose buttercream on the flat side of one shell, and gently place the other shell on top, pressing down to sandwich them together.

                                              - For best results, let the assembled macarons sit in the refrigerator for at least 24 hours to allow the flavors to meld together. Serve at room temperature.
