Sweet Teriyaki Chicken Skewers

Ingredients
  

1 lb (450g) boneless, skinless chicken thighs, cut into 1-inch cubes

1/2 cup soy sauce

1/4 cup brown sugar

2 tbsp honey

1 tbsp rice vinegar

2 cloves garlic, minced

1 tsp grated fresh ginger

1 tbsp sesame oil

1 tsp cornstarch mixed with 1 tbsp water (optional, for thickening)

1 red bell pepper, cut into 1-inch pieces

1 green bell pepper, cut into 1-inch pieces

1/2 large red onion, cut into wedges

Sesame seeds, for garnish

Green onions, sliced, for garnish

Bamboo or metal skewers (if using bamboo, soak in water for 30 minutes prior to cooking)

Instructions
 

Prepare the Marinade: In a mixing bowl, whisk together soy sauce, brown sugar, honey, rice vinegar, minced garlic, grated ginger, and sesame oil until smooth.

    Marinate the Chicken: Place the cubed chicken thighs in a large resealable plastic bag or bowl and pour the marinade over the chicken. Seal the bag or cover the bowl and refrigerate for at least 1 hour, preferably overnight to enhance flavor.

      Prepare the Skewers: Preheat your grill to medium-high heat. While the grill is heating, prepare your skewers. Alternate threading the marinated chicken, red bell pepper, green bell pepper, and red onion onto the skewers.

        Grill the Skewers: Once the grill is ready, place the skewers on the grill. Cook for about 15-20 minutes, turning every 5 minutes, until the chicken is fully cooked and has nice grill marks. If you prefer a thicker glaze, you can brush the skewers with the reserved marinade (boil it for a few minutes to kill any bacteria) during the last few minutes of grilling.

          Thicken the Remaining Sauce: If desired, in a small saucepan, bring the leftover marinade to a gentle simmer. Add the cornstarch mixture and stir until the sauce thickens. Remove from heat.

            Serve the Skewers: Once cooked, remove the skewers from the grill and let them rest for a few minutes. Drizzle the thickened sauce over the skewers and sprinkle with sesame seeds and sliced green onions before serving.
