4 cups fresh broccoli florets

1 cup cherry tomatoes, halved

1/2 cup shredded carrots

1/4 cup red onion, finely chopped

1/2 cup dried cranberries

1/4 cup sunflower seeds

1/2 cup shredded sharp cheddar cheese (optional)

1/2 cup Greek yogurt or sour cream

2 tablespoons apple cider vinegar

1 tablespoon honey or maple syrup

Salt and pepper to taste

Prepare the Broccoli: Start by washing the broccoli florets thoroughly. Blanch them in boiling water for 1-2 minutes, then transfer immediately to an ice water bath to stop the cooking process. Drain and pat dry.

    Mix the Dressing: In a small bowl, whisk together the Greek yogurt (or sour cream), apple cider vinegar, honey (or maple syrup), salt, and pepper until well-combined and smooth.

      Combine Salad Ingredients: In a large mixing bowl, combine the blanched broccoli, cherry tomatoes, shredded carrots, red onion, dried cranberries, and sunflower seeds. If you’re using cheddar cheese, toss that in as well.

        Dress the Salad: Pour the dressing over the broccoli mixture. Gently toss until all the ingredients are thoroughly coated in the dressing.

          Chill and Serve: Let the salad sit in the refrigerator for at least 30 minutes to allow the flavors to meld together. Serve chilled, garnishing with additional sunflower seeds or cranberries if desired.
