4 Mahi Mahi fillets (about 6 oz each)

1/4 cup soy sauce (low sodium recommended)

1/4 cup honey or maple syrup

2 tablespoons rice vinegar

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon cornstarch dissolved in 2 tablespoons water

Salt and pepper to taste

2 tablespoons vegetable oil (for cooking)

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Lime wedges (for serving)

Marinade Preparation: In a medium bowl, mix together the soy sauce, honey (or maple syrup), rice vinegar, sesame oil, minced garlic, and grated ginger. Stir until well combined.

    Marinate the Fish: Place the Mahi Mahi fillets in a resealable plastic bag or a shallow dish. Pour half of the marinade over the fish, reserving the other half for later use. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for a deeper flavor.

      Cook the Mahi Mahi: Heat vegetable oil in a large skillet over medium-high heat. Remove the fish from the marinade and let the excess liquid drip off. Season both sides of the fillets with salt and pepper.

        Sear the Fillets: Once the oil is hot, carefully place the Mahi Mahi fillets in the skillet. Cook for about 4-5 minutes on each side or until the fish is golden brown and flakes easily with a fork. Remove the fillets from the skillet and set aside on a plate.

          Prepare the Glaze: In the same skillet, add the reserved marinade. Bring it to a simmer over medium heat, then stir in the dissolved cornstarch. Cook for 1-2 minutes until the sauce has thickened slightly.

            Glaze the Fish: Return the cooked Mahi Mahi fillets to the skillet, spooning the thickened sauce over them to coat. Cook for an additional minute to heat the fillets through and allow them to absorb some of the glaze.
