1 tablespoon cornstarch

1 tablespoon lemon juice

1 cup rolled oats

1 cup all-purpose flour

1/2 cup brown sugar

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1 teaspoon vanilla extract

For garnish (optional):

Powdered sugar, for dusting

Fresh raspberries and mint leaves for decoration

Preheat the oven: Preheat your oven to 350°F (175°C). Grease and line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal.

    Prepare the raspberry filling: In a medium saucepan over medium heat, combine the raspberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Cook until the mixture starts to bubble and thicken, about 5 minutes. Remove from heat and set aside to cool.
