Sweet Potato Tots with Chili Lime Dip

For the Sweet Potato Tots:

2 medium sweet potatoes (about 1 pound)

1/2 cup breadcrumbs (panko or regular)

1/4 cup grated Parmesan cheese (optional for extra flavor)

1/4 cup finely chopped green onions

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 large egg, beaten

Olive oil or cooking spray (for baking)

For the Chili Lime Dip:

1/2 cup Greek yogurt or sour cream

1 tablespoon lime juice (freshly squeezed)

1 teaspoon lime zest

1 teaspoon chili powder

1/2 teaspoon honey (optional, to balance heat)

Salt to taste

Chopped fresh cilantro (for garnish, optional)

Instructions
 

Prepare the Sweet Potatoes:

    - Preheat your oven to 400°F (200°C).

      - Wash and peel the sweet potatoes, then cut them into large chunks.

        - Boil the sweet potatoes in a pot of salted water for about 15 minutes, or until they’re fork-tender. Drain and let them cool slightly.

          Mash and Mix:

            - In a large bowl, mash the cooled sweet potatoes until smooth. Make sure there are no lumps.

              - Add breadcrumbs, Parmesan cheese (if using), green onions, garlic powder, smoked paprika, salt, pepper, and the beaten egg. Mix until well combined.

                Form the Tots:

                  - Scoop about a tablespoon of the sweet potato mixture and form it into a small tot shape. Repeat until all the mixture is shaped into tots.

                    - Place them on a parchment-lined baking sheet. Lightly spray or brush the tops with olive oil.

                      Bake:

                        - Bake the sweet potato tots in the preheated oven for 25-30 minutes, turning halfway through, until they are golden and crispy.

                          Prepare the Chili Lime Dip:

                            - While the tots are baking, combine Greek yogurt (or sour cream), lime juice, lime zest, chili powder, honey (if using), and salt in a bowl. Mix well until smooth. Adjust seasoning according to your taste.

                              Serve:

                                - Remove the sweet potato tots from the oven and let them cool for a few minutes. Serve warm with the chili lime dip on the side. Garnish the dip with chopped cilantro if desired.
