Sweet Potato Hash with Eggs

2 medium sweet potatoes, peeled and diced

1 small red onion, finely chopped

1 bell pepper (any color), diced

2 cloves of garlic, minced

2 tablespoons olive oil

1 teaspoon smoked paprika

1/2 teaspoon ground cumin

Salt and pepper to taste

4 large eggs

Fresh parsley, chopped (for garnish)

Optional: hot sauce or sriracha (for serving)

Instructions
 

Prep the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and sauté for about 10-12 minutes until they are fork-tender, stirring occasionally to prevent sticking.

    Add Aromatics: Next, stir in the chopped red onion and bell pepper. Cook for an additional 5 minutes until the vegetables are softened.

      Season the Mixture: Add the minced garlic, smoked paprika, ground cumin, salt, and pepper. Mix well and cook for another 2-3 minutes until fragrant. Adjust seasoning to taste.

        Create Wells for Eggs: With a spatula, create four small wells in the hash mixture and gently crack an egg into each well.

          Cook the Eggs: Cover the skillet with a lid and reduce the heat to low. Allow the eggs to cook for about 5-7 minutes or until the whites are set but the yolks remain runny. If you prefer firmer yolks, cook for an additional couple of minutes.

            Serve: Once the eggs are cooked to your liking, remove the skillet from heat. Garnish the hash with fresh parsley and serve immediately. For a spicy kick, drizzle with hot sauce or sriracha.
