Sweet Potato Feta & Spinach Tart

1 large sweet potato (about 1 lb), peeled and cubed

1 tablespoon olive oil

Salt and pepper, to taste

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

3 cups fresh spinach, chopped

1 cup crumbled feta cheese

3 large eggs

1/2 cup heavy cream

1 teaspoon dried oregano

1 pre-made pie crust (store-bought or homemade)

Fresh basil leaves (for garnish)

Instructions
 

Preheat the oven: Preheat your oven to 400°F (200°C).

    Roast the sweet potatoes: In a medium bowl, toss the cubed sweet potatoes with olive oil, salt, pepper, smoked paprika, and garlic powder. Spread them evenly on a baking sheet and roast in the preheated oven for about 25 minutes or until tender and slightly caramelized. Remove from oven and allow to cool slightly.

      Prepare the spinach: While the sweet potatoes are roasting, heat a large skillet over medium heat. Add a splash of olive oil and the chopped spinach. Sauté for about 3-4 minutes until wilted. Remove from heat and let cool.

        Make the egg mixture: In a large mixing bowl, whisk together the eggs, heavy cream, and dried oregano. Season with a pinch of salt and pepper.

          Combine filling ingredients: Once the roasted sweet potatoes and sautéed spinach have cooled, add them to the egg mixture, followed by the crumbled feta cheese. Gently fold to combine everything without breaking up the sweet potatoes too much.

            Assemble the tart: Place the pie crust in a tart pan or pie dish. Pour the sweet potato, spinach, and feta filling into the crust, spreading it evenly.

              Bake the tart: Place the tart in the oven and bake for approximately 35-40 minutes, or until the filling is set and the crust is golden brown.

                Cool and serve: Once done, remove from the oven and let it cool for 10 minutes before slicing. Garnish with fresh basil leaves if desired.
