1 cup canned black beans, rinsed and drained

1 cup diced tomatoes (canned or fresh)

1 small red onion, finely chopped

1 cup corn kernels (fresh, frozen, or canned)

1 teaspoon chili powder (adjust to taste)

1 teaspoon oregano

1/2 cup shredded cheddar cheese (or dairy-free cheese)

1 pre-made pizza crust (or your favorite homemade crust)

Fresh cilantro for garnish (optional)

Instructions
 

Preheat the Oven: Preheat the oven to 425°F (220°C).

    Prepare the Sweet Potatoes: In a mixing bowl, toss the cubed sweet potatoes with olive oil, smoked paprika, cumin, garlic powder, salt, and pepper until evenly coated.

      Roast the Sweet Potatoes: Spread the seasoned sweet potatoes onto a baking sheet in a single layer and roast them in the preheated oven for 20-25 minutes, or until they are tender and lightly caramelized, flipping halfway through.
