Sweet Potato Black Bean Tacos

2 medium sweet potatoes, peeled and diced

1 can (15 oz) black beans, drained and rinsed

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

1/2 teaspoon garlic powder

Salt and pepper to taste

8 corn tortillas

1 cup red cabbage, finely shredded

1 avocado, sliced

1/4 cup fresh cilantro, chopped

1 lime, cut into wedges

Optional toppings: Feta cheese, salsa, sour cream, hot sauce

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare Sweet Potatoes: In a large bowl, toss the diced sweet potatoes with olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper until evenly coated. Spread the sweet potatoes on a baking sheet in a single layer.

      Roast Sweet Potatoes: Roast in the preheated oven for 25-30 minutes, or until tender and slightly caramelized, flipping halfway through cooking.

        Warm Black Beans: While the sweet potatoes are roasting, heat the black beans in a small saucepan over medium heat until warmed through. Season with a little salt and pepper.

          Warm Tortillas: Lightly warm the corn tortillas in a dry skillet over medium heat, about 30 seconds on each side, or wrap them in foil and place them in the oven for 5-10 minutes until pliable.

            Assemble Tacos: Once the sweet potatoes are ready, assemble the tacos by placing a generous spoonful of roasted sweet potatoes and warmed black beans onto each tortilla.

              Add Toppings: Top with shredded red cabbage, slices of avocado, and chopped cilantro. Squeeze lime juice over the top for a fresh zest.
