2 medium sweet potatoes, peeled and diced

1 can (15 oz) black beans, rinsed and drained

1 can (14 oz) diced tomatoes (with juices)

1 medium onion, chopped

3 cloves garlic, minced

1 bell pepper (any color), chopped

2 cups vegetable broth

2 tablespoons olive oil

2 tablespoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (optional, for heat)

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion and bell pepper. Sauté for about 5 minutes or until they begin to soften.

    Add Garlic and Spices: Stir in the minced garlic, chili powder, cumin, smoked paprika, cayenne pepper (if using), and a pinch of salt and pepper. Cook for an additional 1-2 minutes, allowing the spices to become fragrant.

      Incorporate Sweet Potatoes: Add the diced sweet potatoes to the pot, stirring well to coat them with the spices. Cook for approximately 5 minutes, stirring occasionally.

        Add Tomatoes and Broth: Pour in the canned diced tomatoes (with juices) and vegetable broth. Stir everything together to combine.

          Simmer the Chili: Bring the chili to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 25-30 minutes or until the sweet potatoes are tender, stirring occasionally.

            Add Black Beans: Once the sweet potatoes are cooked through, gently stir in the black beans. Let the chili heat through for an additional 5 minutes.
