Sweet Potato Bacon Hash

Ingredients
  

2 medium sweet potatoes, peeled and diced into ½-inch cubes

4 strips of thick-cut bacon, chopped

1 small onion, diced

1 red bell pepper, diced

2 cloves garlic, minced

1 tsp smoked paprika

½ tsp ground cumin

Salt and pepper, to taste

2 tablespoons olive oil

2 green onions, chopped (for garnish)

2 large eggs (optional, for serving)

Instructions
 

Cook the Bacon: In a large skillet over medium heat, add the chopped bacon and cook until crispy, about 5-7 minutes. Use a slotted spoon to transfer the bacon to a paper towel-lined plate and drain excess grease, leaving about 1 tablespoon of bacon fat in the skillet.

    Sauté Vegetables: In the same skillet, add diced onions and bell pepper to the rendered bacon fat. Sauté for about 3-4 minutes until softened. Add the minced garlic and continue to cook for another 1-2 minutes until fragrant.

      Cook Sweet Potatoes: Increase the heat to medium-high and add the diced sweet potatoes to the skillet. Drizzle with olive oil and sprinkle with smoked paprika, cumin, salt, and pepper. Stir well to combine all ingredients.

        Cover & Cook: Lower the heat to medium, cover the skillet with a lid, and let the sweet potatoes cook for about 10-15 minutes, stirring occasionally, until they are tender and start to brown.

          Combine & Finish: Once the sweet potatoes are tender, stir in the crispy bacon. If desired, you can crack two eggs on top of the hash, cover the skillet, and let them poach for about 3-5 minutes, until the whites are set but the yolks are still runny.

            Serve: Remove from heat, garnish with chopped green onions, and serve hot, either on its own or topped with poached eggs.
