Sweet Maple Walnut Oat Bars

Ingredients
  

2 cups rolled oats

1 cup walnuts, chopped

1/2 cup almond flour

1/2 cup maple syrup

1/4 cup coconut oil, melted

1/2 teaspoon vanilla extract

1 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup dried cranberries or raisins (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8 baking dish with parchment paper, leaving some overhang for easy removal.

    Mix Dry Ingredients: In a large bowl, combine the rolled oats, chopped walnuts, almond flour, cinnamon, and salt. Stir until well mixed.

      Combine Wet Ingredients: In another bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract until smooth.

        Combine Mixtures: Pour the wet mixture into the dry ingredients and mix until everything is well combined. If you’re using dried cranberries or raisins, fold them in at this point.

          Press into the Pan: Transfer the mixture into the prepared baking dish. Use a spatula or your hands to firmly press the mixture down evenly into the pan.

            Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the edges are golden brown and the center is set.

              Cool and Cut: Once baked, remove from the oven and let it cool in the pan for about 10 minutes. Lift the bars out using the parchment paper and allow to cool completely on a wire rack. Once cooled, cut into squares or bars.

                Store and Enjoy: Store the bars in an airtight container at room temperature for up to a week, or refrigerate for longer freshness.
