1 lb Brussels sprouts, trimmed and halved

2 tablespoons olive oil

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 cup pure maple syrup

1 tablespoon balsamic vinegar

1 teaspoon Dijon mustard

1/4 teaspoon garlic powder

1/4 cup chopped pecans (optional, for crunch)

Fresh thyme leaves (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large bowl, combine the halved Brussels sprouts with olive oil, salt, and black pepper. Toss to coat evenly.

      Spread the Brussels sprouts in a single layer on a baking sheet, cut side down.

        Roast in the preheated oven for 20-25 minutes, or until they are crispy and caramelized, tossing halfway through for even cooking.

          While the Brussels sprouts are roasting, prepare the glaze. In a small saucepan over medium heat, combine maple syrup, balsamic vinegar, Dijon mustard, and garlic powder. Whisk together until well blended and simmering. Cook for 3-5 minutes until slightly thickened, then remove from heat.

            Once the Brussels sprouts are done roasting, transfer them to a large bowl. Pour the maple glaze over the sprouts and toss gently to coat.

              If using, sprinkle chopped pecans on top for added crunch.
