3 cups rolled oats

1 cup nuts (walnuts, almonds, or pecans), chopped

½ cup pumpkin seeds (pepitas)

½ cup shredded coconut (unsweetened)

½ cup maple syrup

¼ cup coconut oil (melted)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

½ teaspoon salt

1 cup dried fruits (raisins, cranberries, or apricots), optional

Preheat the Oven: Preheat your oven to 325°F (163°C) and line a large baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped nuts, pumpkin seeds, shredded coconut, ground cinnamon, and salt. Stir until everything is well incorporated.

      Combine Wet Ingredients: In a separate bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract until fully mixed.

        Combine Wet and Dry: Pour the wet ingredients into the dry mixture and stir to coat all the ingredients evenly.

          Spread on Baking Sheet: Transfer the granola mixture onto the prepared baking sheet, spreading it out evenly to allow for even baking. Press it down lightly for chunkier clusters.

            Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes or until golden brown, stirring halfway through to ensure even cooking.

              Cool and Add Dried Fruits: Once baked, remove the granola from the oven and let it cool completely on the baking sheet (it will crisp up as it cools). If using dried fruits, gently mix them in once cooled.

                Store and Enjoy: Once cooled, transfer the granola into an airtight container. Enjoy it on its own, with milk or yogurt, or as a topping for smoothies and desserts!
