1 lb baby carrots (or chopped regular carrots)

2 tablespoons honey

1 tablespoon olive oil

1 teaspoon cinnamon

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon apple cider vinegar

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Carrots: If using whole baby carrots, you can leave them as is. If using regular carrots, peel and cut them into bite-sized pieces.
