Ingredients

1 cup all-purpose flour

1 cup cornmeal

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup buttermilk (or whole milk with 1 tablespoon vinegar)

2 large eggs

1/4 cup unsalted butter, melted

1/2 cup honey

1/4 cup sweet cream butter, softened (for topping)

A pinch of sea salt (for topping)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Grease a 9-inch square baking dish or a cast-iron skillet with butter or cooking spray.

Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, cornmeal, granulated sugar, baking powder, and salt. Whisk them together until well incorporated.

Combine Wet Ingredients: In a separate bowl, whisk together the buttermilk, eggs, and melted butter. Slowly pour in the honey while whisking to combine.

Combine Mixtures: Create a well in the center of the dry ingredients and pour in the wet mixture. Gently fold the dry ingredients into the wet until just combined—be careful not to overmix; a few lumps are okay.

Bake the Cornbread: Pour the batter into the prepared baking dish or skillet. Smooth the top with a spatula. Bake in the preheated oven for 20-25 minutes or until the edges are golden and a toothpick inserted in the center comes out clean.

Prepare Sweet Honey Butter: While the cornbread is baking, in a small bowl, combine the softened sweet cream butter with the remaining honey and a pinch of sea salt. Mix well until creamy and smooth.

Cool and Serve: Once the cornbread is done, let it cool for about 10 minutes in the pan. Cut into squares or wedges, and serve warm with the honey butter spread on top for added sweetness.
